Bozal Borrego is a limited release. This mezcal is made with wild agave Castilla, which is a close relative to agave Espadin. Similar to a Pechuga, during the second distillation, a leg of lamb, in addition to seasonal wild fruits and grains harvested from the local market, are suspended inside the bottom of the still in a basket. These wild fruits include strawberries, apples and pineapple, while additional ingredients consist of pecans and ginger. This mezcal is heavily viscous. It is fruity, but balanced with notes of citrus and finish of smoked lamb.

One hour beyond the village of Chichicapa and through a mountain pass, one arrives at Santa Catarina Minas. This pueblo has an arid semi-tropical microclimate and great water! Our palenqueros, Florencio Carlos Sarmiento and his sons Florencio Carlos Vasquez and Luis Carlos Vasquez, are true craftsmen. Their “palenque” (site of production)is the most well organized we have seen, including a cistern to cool and recycle the water used in the condensation process. The most unique facet of this pueblo that gives the fruitiness to Minero, is that the still is made of clay with bamboo tubing, rather than the usual copper stills and tubing.

Del Maguey brings you this very limited edition Vino de Mezcal series made in the remote Northern Mixteca Alta region of Oaxaca, Mexico. This is the perfect example of the dicho: “You don’t find mezcal. Mezcal finds you.” We met Don Roberto going down a canyon lush with wild agaves in the middle of nowhere. He was out deer hunting with some friends many hours on foot from their village. Four hours back on our rocky, dirt road we were told about the village of Rio Minas but looking at a map it was obvious that it was a three hour detour on an even worse road, so we passed. Now four hours later we ran into this group of hunters all armed with rifles. We asked if they know of the mezcal of Rio Minas and Don Roberto laughed. He motioned to a buddy and the guy passed a half-liter plastic water bottle with an incredible mezcal inside made by the man standing in front of us. A bright sweet nose of papaya and ripe peaches gives way to a lightly sweet and very floral palate like carrying a bouquet of roses and violets. Rio Minas palate ends with pepper notes and an herbal component of Hoja Santa and eucalyptus resulting in a refreshing finish.

Derrumbes San Luis Potosí is an incredible example of a very particular style of mezcal crafted in the high altitude Central Mexican Plateau, in the state of San Luis Potosí.
Made from the region's wild agave Salmiana, it gives the mezcal a unique, vibrant flavour. Despite its abundance, this agave has a very low yield, needing up to four times as much to create an equal amount of spirit when compared to the blue agave used in the tequila region. Grown in calcareous soils, this mezcal terrifically showcases its terroir characteristics, with chalky notes very evident in the flavour profile.
Produced in an old traditional hacienda, above ground ovens known as hornos are used to cook the agave which mean their mezcal is not smoky. Once cooked, the agave is crushed by a tahona, fermented naturally with wild yeast, twice-distilled in small copper pot.
