Akayane Premium Vodka is made by slowly breaking down local Kagoshima sweet potatoes to convert its starches into sugar, without rice koji. The sugar is slowly fermented at a low temperature to create a mash, which is then distilled in a directly-heated Charentais still (typically used for Cognac). The spirit is then filtered through white birch charcoal. This premium vodka has the sweet scent of sweet potatoes, which is slightly different from the aroma of sweet potato shochu, and has a crisp and sharp aftertaste.
